  • Add the lentils, vegetable stock, or water and canned tomatoes and gently stir it. 
  • Boil it for another 15 minutes until the lentils become soft. 
  • Put the mix in a food processor or a blender and blend it till it reaches a puree consistency. 
  • Pour the soup back into the saucepan and add chickpeas. 
  • Allow the soup to boil for about 5 minutes and season as per your taste. 
  • Chop some fresh coriander and add it to the soup along with some Greek yoghurt
